What we will eat is probably the last thing we think about as we head off to a new emergency. To do the job, though, we need to extract all of our strength and stamina from food. But, bland food is such an appetite killer.
We suggest packing a ziplock bag or two of your favourite herbs.(Looks suspicious? Tell the Customs guys you are a cook!) You will only ever need a pinch to make that bowl of rice or noodles a bit tastier.
Before you go, we suggest packing:
Oregano for fry pan pizzas, tomato sauce or anything you want to taste remotely Italian
Thyme for sautéed onions, vegetables and pretty much anything you can cook in a frypan
Magic mushroom powder (see earlier post)
Cinnamon makes everything taste sweeter without the sugar hit. You can add it to rice for dessert, sprinkle on your flatbread toast or toss it on whatever fruit you can find
On a day off, forage through the markets to see what is readily available. Be adventuous! Let us know what you find or send us a market photo and we’ll try to help you with recipe variations.
Pizza in a frypan can be quick (use the local flatbread cut to fit your pan) and quite nutritious (topped with sauteed vegies.)
- Saute onions and any vegetables. Put aside.
- Warm the local bread in the frypan on low heat. Drizzle with oil mashed with garlic clove and salt.
- Add available toppings: tinned tomatoes or tomato paste , oregano; dried olives, sauteed onions, mushrooms, zucchini, pumpkin, yams.
